    I have recently started working on a 67 T1c Kombi, and I was wondering what is the easiest way to work on the engine. Is there some way to open the top of the compartment, or to slide the engine out or what? Its just a real pain to try and work in that tiny engine compartment.

you can remove the rear apron which should be held on by 2-4 bolts behind the bumper and some screws in the engine bay. 
Gives a little more room.

And pulling the engine is simple enough.

What are you trying to do to it?

The bus has been parked for about thirty years ans I just want to get in there and change the plugs, filters, and clean it up so i can get it running.

yeah, just pull the bumper and the apron (the piece of sheet metal that the engine hatch latches to) off.  It's easy to see where they are connected.  That will allow you to get in there a little closer.

You'll likely need to pull the engine for cleanup, and remove and clean the fuel tank.  But if you just want to see if it will run, you can probably get away with flushing the tank or running it off gas poured in the carb.

Make sure you change the oil before you try to start it........ after that much time i bet it's not oil anymore......it probably reverted back to water and animal fat..... Eek!

 I usually give it a good shot of WD-40 in each spark plug hole and turn it over by hand a few times first....  Thumbs up! 2 helps to loosen the rings and not score the cylinder walls as bad as dry/rust will......

Squirt some Marvel Mystery Oil down the plug holes, leave plugs out. Pull off the valve covers and drench the rocker assemblies as well as squirting what you can down the push rod tubes. With the spark plugs out and fresh oil turn engine by hand a couple revolutions, if it feels smooth with no rough turning, crank it over with the starter till the oil light goes out. If it's cold where you are use a 10w30 oil or the light may not go out cranking by starter. If the oil light goes out, put the spark plugs back in, and try starting it. Change the oil again after running it and tuning it. Then pull the engine out and replace ALL the fuel lines!!
